紙出力前提の制作物の場合は、問題にならないと思います（たぶん）
Adobe Illustrator2026の内蔵の小塚ゴシックはこちらにある通り
KozGoPr6N-Regularですが
Adobe Acrobatの内蔵小塚ゴシックは
KozGoPr6N-Mediumです
なので
Acrobatでの編集内容によっては、フォントの置換が必要だったり
置き換えが発生したりします。
また
体裁としてのフォントが違うといった
ちょっと嫌な感じになります。
■Illustratorでの制作時点から『KozGoPr6N-Medium』で制作する
■Acrobatで『KozGoPr6N-Regular』編集する
■文字（フォント）が変わっても気にしない

案件やPDFをAcrobatで編集する方が別の場合は、担当者とすり合わせをして
どちらでAcrobatの編集を処理するのか？
すり合わせをすると良いと思います
最終的なエンドユーザーのAcrobat Readerには
KozGoPr6N-Mediumしか入っていないのが前提です
フォーム内の文字指定もありますから
『PDFフォーム周りについては」KozGoPr6N-Mediumで制作すると、トラブルが少ないとは思います。
ワンポイント（さらに注意点）
Illustrator内蔵の小塚ゴシックは、
バージョンが6と少し古いのにも注意してください
